Abigail was diagnosed coeliac as a child – there were very few ‘gluten free’ products available when she was growing up. During the early days of her diagnosis she found it very hard to adjust to ‘no gluten’ in her meals especially so coming from an Italian heritage! Fast forward twenty years and there are heaps more products available and Abigail discovered a love for cooking and sharing her meal creations online via Instagram. Having always struggled with her weight, Abigail made it her mission to create gluten free meals that were healthy, satisfying and tasty. She is a mother of three (twins and a singleton) none of whom are coeliac, but all happily eat Mum’s gluten free creations! Abigail is also a strong advocate for an overall healthy and balanced lifestyle – she teaches group fitness classes and is currently studying a Certificate IV to become a personal trainer. Stacey from Natural Spoonfuls is a qualified Nutritionist & Accredited Health Coach, who passionately advocates embracing nature to nourish lives. She runs multiple online programs helping others to live nutritious, balanced & nourishing lives. Stacey takes a refreshing simplified approach to health. Bee was diagnosed as coeliac as a child and strives to create coeliac/plant-based recipes that taste just as good as the normal version. As a full-time student Bee balances her degree with her love of experimenting in the kitchen. She can’t start the day without a bowl of oats and a big spoon of peanut butter.
