Apple Crumble Muffins

A classic recipe with a twist, these muffins are next level delicious. The oat flour produces a fluffy texture and the golden crumble on top provides a delicious crunch! These are definitely going to be your new favourite.

Servings: 12 Muffins

Ingredients

  • 2 cups GF Oat Flour
  • 1/3 cup Coconut/Rapadura Sugar
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon 
  • 2 Apples, diced
  • 1 Free-Range Egg, whisked
  • ¾ cup Unsweetened Plant Based Milk (I used Almond)
  • ¼ cup Extra Virgin Coconut Oil
  • ½ tsp Vanilla Extract

Crumble

  • 1/3 cup Shredded Coconut
  • 1/3 cup GF Rolled Oats
  • ¼ cup Extra Virgin Coconut Oil 
  • 2 tbsp Coconut/Rapadura Sugar
  • ½ tsp Cinnamon

Method

  1. Preheat oven to 180 degrees fan forced. 

  2. Combine all dry ingredients (flour, sugar, baking powder and cinnamon) in a bowl.

  3. Combine wet ingredients (apples, eggs, milk, oil and vanilla) in a separate bowl. 

  4. Pour wet ingredients into the dry and stir until well combined. 

  5. Divide mixture into a muffin tray. 

  6. In a separate bowl combine crumble ingredients (coconut, oats, oil, sugar and cinnamon). 

  7. Top with each muffin with crumble and bake until crumble begins to turn golden, approximately 20 – 25 minutes.
