Chocolate Chip Oat Biscuits

Chocolate Chip Oat Biscuits made using Gloriously Free Oats Products. Great for a delicious, healthy snack for school and work lunchboxes. The kids will love these chocolate chip cookies for an after-school snack. And adding the oats make them extra healthy. They won’t last long in the cookie jar! Here is the recipe – enjoy!

INGREDIENTS

  • 1 cup GF Oats
  • 1 teaspoon Vanilla
  • 2 Eggs
  • 1 cup GF Chocolate Muesli
  • 60g packed Coconut sugar
  • 1 cup Banana flour
  • 60g Coconut oil
  • 1 teaspoon Baking Soda
  • pinch of Salt
  • 1 cup chopped Nuts (optional)

METHOD

  1. Heat oven to 160 deg C.  In a large bowl or thermomix, stir brown sugar and coconut oil until blended.
  2. Stir in vanilla and egg until light and fluffy.
  3. In a separate bowl, add oats, flour, baking soda, salt and Chocolate Muesli and nuts.
  4. Add wet mixture to dry mixture and hand mix until well combined. The mixture should be more dry than wet in texture so you can scoop out a portion and roll into a ball in your hands.
  5. Drop rounded tablespoon sized balls of mixture onto an ungreased cookie sheet or tray, about two inches apart.
  6. Bake for approximately 10-12 minutes or until golden brown. Cool slightly on tray or cookie sheet before moving to wire rack to cool.
