Christmas is almost upon us and with it is those beautiful spices and fragrant scents which evoke holiday cheer! In today’s recipe, we’ll be making some lovely healthy snacks that are vegan, free of refined sugar and are safe for most food intolerances (but allow plenty of room for substitutions, if need be!)
Our Christmas Balls are at their most classic form when made with our Mixed Spice Muesli, but you can easily use our Chocolate Muesli as well as our ANZAC Biscuit Crumble to add some delicious variation to your table.
With only three core ingredients, this recipe comes together in a flash and doesn’t need to be baked, so it’s perfect for those last-minute preps too.
- 2 cups Mixed Spice Muesli (or Chocolate Muesli or ANZAC Biscuit Crumble)
- 1 cup dates
- ¾ cup melted coconut oil
- Blend 1 cup of dates until smooth.
- Add muesli, coconut oil, and any optional ingredients and blend on high until the mixture is crumbly but binds together when pressed.
- Form your mixture into balls and serve them as is, or roll them in chopped nuts or shredded coconut.
Super easy! If you find your balls are a little too crumbly, simply pop them back into the blender with a little more oil or honey and pulse until things come together to your preferred consistency. These fantastic healthy treats will keep in the fridge for 3-4 days, and can be prepared and frozen in advance; simply take them out and defrost them a few hours before serving! Serving suggestions: these Christmas Balls make excellent protein-packed lunchbox snacks, as well as delicious bites for hungry guests. Try them with a yoghurt bowl or some fresh fruit.
