Kylie uses the GF Oats Traditional Oats to make this crunchy version of Granola she had come across whilst on a trip visiting her daughter in Canada. It has the most delicious flavour and adds a superb crunch to your meals. Perfect to top your soups and salads with, or as an addition on your fave oaty brekky dish! So simple and super easy to create and very versatile.
1 cup GF Oats Organic Oats
1/2 cup Apricots
1 cup mixed nuts and seeds – pepitas, sunflower kernels, tiger nuts, almonds. (or whatever mix you would prefer)
1/2 cup Coconut oil
1/4 cup Flaked Coconut
1 egg white or alternative (aquafaba)
1 tsp Vanilla
1 tablespoon Honey or alternative (rice malt syrup or maple syrup could be used)
Pinch of grey or pink salt
1. Preheat the oven to 180c. Line the baking tray with baking paper.
2. Place oats, apricots, nut and seed mix, coconut oil, flaked coconut, egg white, vanilla, honey and salt in a medium bowl and toss them to combine.
3. Spoon oat mixture in a thin layer over the lined tray. (not too thin)
Bake for 20-25 mins or until lightly toasted. Set aside to cool. Then break into small pieces.
