We can all be strapped for time at time and especially at breakfast which is the most important meal of the day. This means you need to be able to whip something up in as little time as possible.
1 cup Buckwheat pancake mix
2 cups Oat flour (made from GF Oats Traditional Oats) Find the recipe here
1 egg or egg replacer
1 tsp Vanilla Essence
Add 1-2 tbs Sweetener of choice (if desired) –
Rice malt syrup
Pure maple syrup
GF Oats Pure gluten free honey
Water (if needed)
Coconut Oil or Butter for pan
Crunchy Granola (find the recipe here)

Add Buckwheat pancake mix into a bowl, add oat flour (recipe to make oat flour here) and mix together.
Add Oat milk (recipe to make oat milk here) and mix together well.
Add sweetener if desired. Combine.
Add Coconut oil or butter to the pan.
Pour batter into pan.
Once the pancakes start forming bubbles, it’s time to flip them over and cook on the other side. Once they are golden they are ready.
Plate the pancakes up with some Crunchy Granola and some yogurt of choice. Top with sweetener and enjoy!
