Organic Cacao Coconut Baking Mix

We are loving the products from Nature Pacific. Specifically, their Banaban Coconut Products which includes the Organic Cacao Coconut Baking Mix. And we thought we would share some more of them with you.

We are currently using their Coconut Sugar in our Muesli Blends which is, by the way, the very best one I have tried. Soft, smooth and tastes delicious. This is one of their baking mixes I am loving at the moment.

It is as it says on the packet The Ultimate Cacao Coconut Baking Mix, Perfect for Muffins or a Delicious Cake. I am more of a muffin girl, so here are the results and of course I have pimped them up with a GF Oats Granola that I had made earlier.

Now coconut flour is quite dense as far as gluten-free flour goes, but these were moist and lovely and stayed fresh for few days.  They were very filling and tasty so a Big Thumbs up from me. They are Organic, Paleo, Dairy Free, Gluten Free,  Vegan and Refined Sugar-Free.

So that ticks a few options for me.

I followed the baking instructions on the back which were: 1 Packet of Cacao Coconut Baking Mix Add 1 large banana 4 Eggs 2 tbsp of Coconut Oil

Method:

Pour the ingredients of the packet into your mixing bowl. Add in the wet ingredients and blend until well combined for approximately 2 minutes. The mixture was thick but smooth and not too dense.  Spoon into the lined muffin trays and sprinkle with some GF Granola Mix Bake in the muffin trays,  I did 6 large for about 30 -40 minutes.
