Strawberry and Chocolate Bites
Show them you love them with chocolate
Valentine’s day is such a wonderful reminder for me personally, to give thanks to all the people I love, not just that one. When the kiddies were young, I used to whip up a batch of gluten-free heart biscuits for that week’s lunch boxes, just to remind the kids I loved them.
Of course, when I think about it, nothing really says I love you like chocolate and strawberries. As a mixture, these two ingredients are just designed as the perfect match in my opinion. 😊Everyone has their own faves, let me know yours in the comments.

- 1 cup of frozen strawberries
- 1 cup of Chocolate Oats
- ½ cup of sunflower seed
- ½ cup of coconut flour
- ¼ cup of coconut oil
- ½ cup of desiccated coconut
½ cup of Sweet William Gluten-free chocolate ½ cup of desiccated coconut
Place all the ingredients in a high-powered blender. I used my trusty Thermomix and turned it up to Speed 7 for 25 secs. Stop and mix, then do it again. I had to use the spatula to encourage those frozen strawberries to chop up. It was easier the second time when I let them thaw a little before blending them. The mixture should be easy to work with, not too wet, not too dry. I just took some out and tested to see if I could easily roll them into a ball in my hands. Too dry, add a little more coconut oil, too wet a sprinkle more chocolate oats and blend again.
I then took about teaspoon size amount of the mixture and rolled them into neat balls. Once I completed the process, I put the chocolate oat balls into the fridge overnight. This step you can miss, it is not compulsory, I just found them easier to work to add the coating.
Next step melts the chocolate in the microwave for about 1 minute, then start by dipping the chocolate balls into the melted chocolate, rolling them in it and if you want you can roll them in the coconut. Totally up to you at this point.
Leave them to cool, which does not take long then serve and of course, enjoy eating them knowing they are not so bad for you.
