Summer Bircher Muesli Favourites for Breakfast

We are sharing some our Summer Bircher Muesli Favourites for Breakfast recipes with you. These recipes are easy to make for Breakfast and use our own GF Oats. Well as the days are finally starting to warm up, I find myself like many of you I would think, starting to look at other ways we can eat our morning oats other than porridge.

Breakfast cereals, of course, are a fabulous fast way of getting breakfast in during a busy morning; one of my favourite ways is with delicious Bircher Muesli.

I wanted to share 2 of my go-to Summer Bircher Muesli Favourites for Breakfast.

As a side note, soaking your oats overnight assist the leaching out of the phytates in the oats, which can inhibit digestion and the absorption of nutrients from the oats.

Coconut Bircher Muesli

Ingredients:

½ cup of GF Oats

1 tbsp of Sesame Seeds

2 tbsp of shredded coconut

¾ cup of coconut water

Method:

Place ingredients in a glass or bowl in the order listed above.  Cover and leave overnight on the kitchen bench or in the fridge, whatever you prefer.  Then you can add in your favourite milk and fruit the next morning and your breakfast cereal is ready to go.

Easy Overnight Apricot Oats

Ingredients:

¾ cup of milk or milk alternative

2 apricots chopped, dried or fresh

½ cup of GF Oats

1 tsp lemon zest

½ tsp of vanilla essence

1/3 cup of nuts of choice

2 tbsp of maple syrup

Method: 

Combine oats, milk, lemon zest and vanilla in a bowl.  Cover and refrigerate overnight.  In the morning, stir in the nuts, apricots and maple syrup.

Enjoy cold or heat for a few minutes before serving.
