Oats Pancakes with Plum Topping

This is a great way to use our GF Oats in this delicious, healthy recipe for Oats Pancakes with a plum topping.
1 Portion
Soak 30 g of GF Oats overnight in water. Use a good size bowl to allow for mixing the next morning.
In the morning, remove excess liquid
Break two eggs into the bowl
Add one small grated apple or a small mashed banana to the mix
Add a pinch of salt, 1/4 tsp of Chinese 5 spice or 1/2 tsp of cinnamon
Mix everything well
Heat pan with a knob of butter or oil of your choice on high heat (adjust quantity depending on non-stick or regular pan) This recipe requires at least some fat.
Add pancake mix and turn down heat to medium-low (4 out of 10)
Turn over with a large spatula after a few minutes when brown and fragrant to cook the other side.
Serve and enjoy!
Alternatively only mix oats, eggs and spices and sprinkle fresh or frozen fruit of your choice on top once you have poured the mix into the pan. Blueberries, raspberries and plums work really well.
