Caramel Oat Bites

Serves 20

Ingredients200g dates, soaked in hot water for one hour2 cups GF Oats, plus extra to coat1 Tblspn cashew nut butter2 Tblspns melted coconut oil2 Tblspns coconut sugarMethod1.     Drain the dates and put them in a food processor along with the oats, cashew nut butter, coconut oil and coconut sugar2.     Blend until a smooth sticky paste has formed3.     Place the mixture in the fridge for 10 minutes (makes it easier to roll into balls)4.     Separate the mixture into small portions, roll into balls and roll in the extra oats until they are fully coated5.     Store in the fridge
