Crunchy Christmas Granola

I just love giving and receiving homemade gifts to family friends and colleagues. 
This year I have made some biscuits from our delicious Ginger, chocolate and mixed spice biscuit premixes and a delicious Crunchy Christmas Granola.

Ingredients

1/3 cup of coconut oil
1/3 cup of Nuttlex or butter 
1/4 cup of maple syrup, honey or rice syrup
1 tspn of Vanilla
1/4 cup of brown or coconut sugar
1 cups of GF Oats
3 cups of any of the Muesli blends, I used the Mixed Spice and the FruCrunchy Christmas Granolait and Nut Muesli.

Method 

  • Preheat oven to 160oC and line a baking paper.
  • In a medium bowl mix together the coconut oil, brown sugar, maple syrup,  butter, and vanilla extract. Fold in oats and muesli and mix until fully combined.
  • Transfer to the prepared baking tray and using a spatula to press down so the granola is in a compact even layer.
  • Bake for approx 35-40 minutes, the granola will be a beautiful golden brown.
  • Let cool on baking rack for 1 hour then break into clusters. Store in an airtight container for up to 2 weeks

    Pop into some empty bottles and top with some Christmas paper or material

      If I soak my oats overnight to get rid pf phytic acid, how do I use them to make granola?
