Quinoa Brittle

This delicious GF, vegan and refined sugar free recipe is the creation of The.mindfulpeanut.  Enjoy a yummy, healthful mix of white & red quinoa, nuts, maple and cinnamon in this tasty and healthy treat.
Unlike most plant-based foods, quinoa is a complete protein, which means it contains all of the essential amino acids. Amino acids are the building blocks of the proteins that make up your muscles, bones, skin, and blood. The nine classified as “essential” must be obtained from food daily — your body cannot produce or store them — and quinoa provides all nine! It also is a wonderful source of fibre.


  • 75g quinoa 
  • 75g nuts (eg pecans, walnuts & sliced almonds)
  • 25g Oats @gfoats
  • 1 tsp Cinnamon
  • 2 tbsp Coconut Sugar (or brown sugar)
  • 2 tbsp coconut oil
  • 1/2 cup maple syrup


  1. In a saucepan heat maple syrup & oil.
  2. Add dry ingredients to heated maple mixture and spread on to a parchment lined baking tray.
  3. Bake at 325/150 for 20 minutes.
