Ingredients:
- GF Oats Pancake Mix
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh spinach, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped green onions (scallions)
- 1 large egg
- 2 tablespoons olive oil
- Cooking oil or butter for cooking
Instructions:
- In a large mixing bowl, combine the gluten-free oats pancake mix, finely chopped spinach, crumbled feta cheese, and chopped green onions.
- In a separate bowl, whisk together the egg, buttermilk, and olive oil until well combined
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay
- Preheat a skillet or griddle over medium-high heat and lightly grease it with cooking oil or butter
- Pour about 1/4 cup of the Savory Spinach and Feta Oat Pancake Mix onto the hot skillet for each pancake. Use the back of a spoon to spread the batter into a round shape if needed
- Cook the pancakes until you see bubbles forming on the surface, then flip them with a spatula. Cook for an additional 1-2 minutes, or until the pancakes are golden brown on both sides
- Transfer the cooked pancakes to a plate and keep them warm. Repeat the process with the remaining batter
- Serve the pancakes with a dollop of sour cream or Greek yogurt and a sprinkle of additional chopped green onions, if desired.
