They’re the most iconic Australian oat-based snack, and we know you’ll love them! Gluten free Anzac biscuits recipes aren’t hard to come by, but we think that nothing beats the classic Anzac biscuit variety. ANZAC cookies are historically made around the holiday of the same name, but why not bake them all year round? Jam-packed with delicious oats, golden syrup and coconut, ANZAC biscuits are a one-of-a-kind, and this is our all-time-favourite gluten free Anzac biscuits recipe. The Anzac biscuit has been called many names over the years before arriving on the name we know and love. They’ve been called “surprise biscuits”, “crispies”, “red cross biscuits” and “soldiers biscuits”, all before they earned the once-of-a-kind Anzac biscuit title. The first printed reference to the Anzac biscuit was reportedly found in a 1917 Australian publication: The War Chest Cookery Book, though the recipe strayed from the once we’re familiar with today—with eggs, jam and cream included. The last thing missing from Anzac biscuits in the old-timey cooking books was coconut, but it was discovered at last in a 1924 Adelaide cooking book. In our humble opinion, the best part of the Anzac biscuit is the oats! But maybe that’s because we’re experts in all things oats.
