Packed with wholesome oats, and topped with decadaent dark chocolate, it's the perfect blend of nostalgia and sweetness in every bite.
INGREDIENTS:
Base:
Topping:
- 1 packet Anzac Crumble
- 1 cup of Traditional Oats
- 1/2 cup coconut sugar
- 2 teaspoons baking powder
- 1 tsp vanilla essence
- 2 tablespoons maple syrup
- 150 g butter
- 1 cup desiccated coconut
- cinnamon and ginger
Topping:
- 2 and 1/2 cup dates soaked in hot water for 15 minutes
- 1/2 cup almond butter
- 3 tablespoons coconut oil
- 1/4 cup water
- Cinnamon and ginger
- Chocolate Chips
METHOD:
- Preheat the oven to 180°C fan bake.
- Line a tray with baking paper.
- Mix together the crumble mix, desiccated coconut, old fashioned oats, ginger spice mix and baking powder in a bowl.
- Melt butter in a saucepan over medium heat. Mix in date syrup, coconut sugar and vanilla essence.
- Create a well in the dry ingredients and add the butter mixture. Mix evenly. Add more melted butter if needed.
- Put in the tray and spread evenly, gently pressing down.
- Bake for 15-20 minutes until golden on top. Cool in tin.
- Whilst slice cools prepare the topping.
- Assemble food processor and add in dates, almond butter, ginger spice blend and melted coconut oil. Blend this on high and add more water to help blend.
- Once the base has cooled add the date mixture to the top and evenly spread.
- Drizzle with either dark chocolate or coconut oil/cacao mix and top with more desiccated coconut.
- Store in the freezer for 2 hours.
- Slice it up and devour!
- Leave in the freezer and defrost a piece in the fridge before eating.
