If you’re a cake lover and would happily eat an entire one for breakfast, here’s a recipe that was made for you!
INGREDIENTS:
- 30g Traditional Oats
- 1 ripe banana, mashed
- 170ml unsweetened almond milk
- 50g carrot, peeled and grated
- 20g vanilla protein powder
- 1/3 tsp baking powder & vanilla extract
- 40g vanilla protein yoghurt & some cinnamon
METHOD:
- Preheat your oven to 180 degrees Celsius and grease a ramekin with spray oil.
- In a bowl using a fork, mash your ripe banana until smooth and free from lumps.
- Add in the almond milk, oats and protein powder, stirring well.
- Grate your carrot finely then add this into the mixture, stirring well again. Add in your baking powder, vanilla and a pinch of salt.
- Stir well. You may wish to use a spatula to combine all of the ingredients nicely.
- Pour this mixture into the greased ramekin. Bake at 180 for 15-20 mins or until cooked through and lightly golden on top. Alternatively in the air fryer, bake at 180 on the ‘bake’ setting for 10-15 mins or until cooked through and browning on top.
- Once cooled down slightly, add your yoghurt on top. Dig in and enjoy!
