Not only Gluten Friendly and Vegan but so delicious and comforting for those times when you crave a warm sweet treat. Try this new take on the classic sticky date pudding for the ultimate dessert indulgence.
Ingredients
Pudding:
- 1/2 cup pitted dates
- 1/4 cup boiling water
- 1/4 tsp GF baking soda
- 1/4 cup GF Oats Oat Flour
- 1/4 cup melted coconut sugar
- 2 Tablespoons melted vegan butter
- Dash of cinnamon
Caramel Sauce:
- Caramel Sauce
- 3 Tablespoons coconut sugar
- 100ml condensed coconut milk or coconut cream (unsweetened)
- 1/2 Tablespoon coconut oil
- Dash of vanilla essence/extract
Method
Pudding:
Preheat oven to 180 degrees C. Soak the dates in the hot water with baking soda for 15 minutes, then drain and save the water and blend the dates into small pieces. Add the oat flour, cinnamon, and coconut sugar to a bowl. Melt the vegan butter and mix in with the dates and the water mixture, then mix with dry ingredients until completely mixed. Bake for 25-30 minutes. Test with a skewer to make sure it's done, then add the caramel sauce on top and serve with a scoop of dairy-free vanilla ice cream or coconut yogurt. 
Sauce:
Add the ingredients to a saucepan and bring to a boil, then simply reduce to medium heat and stir constantly until it thickens and darkens in color.
