
Creamy overnight oats with chia, coconut yoghurt, coconut milk, honey, and cinnamon, topped with sweet stewed apple for the perfect cosy breakfast. A gut friendly and scrumptious brekkie.
Ingredients:
- 1/2 cup GF Oats
- 1 tablespoon chia seeds
- 1/2 teaspoon ground cinnamon
- 1/3 cup coconut yoghurt
- 1/2 cup coconut milk
- 1 teaspoon GF Oats honey (or to taste)
Stewed apple topping:
- 2 apples, peeled and diced
- 1/2 teaspoon ground cinnamon
- 1 to 2 tablespoons brown monkfruit sweetener
- 1 to 2 tablespoons water
Method:
- In a glass container or jar, combine the oats, chia seeds, cinnamon, coconut yoghurt, coconut milk, and honey.
- Stir well until everything is evenly mixed.
- Cover and place in the refrigerator overnight, or for at least 4 hours.
- To make the stewed apple, add the diced apples, cinnamon, brown monkfruit sweetener, and water to a small saucepan.
- Cook over medium-low heat, stirring occasionally, until the apples are soft and lightly caramelised.
- Let the stewed apple cool slightly, then spoon it over the overnight oats before serving.
Notes
- This makes 1 generous serving or 2 lighter serves.
- Add a little extra coconut milk in the morning if you prefer a looser texture.
- You can serve it chilled, or warm the apple topping before adding it.
