Indulge in this luscious berry dairy-free cheesecake, a guilt-free treat bursting with fruity goodness!
INGREDIENTS:
Base:
- 6 ANZAC Biscuits
- 2 medjool dates - soaked and pitted
- 1 tbs nut butter
Filling:
- 1/2 can coconut cream
- 1 tsp vanilla bean extract
- 2 tbs nut butter
- 1/4 cup desiccated coconut
- Berries
- Dark chocolate to drizzle
METHOD:
- Blitz base ingredients together until a crumbly mixture forms and begins to get sticky.
- Roll into 5 balls and press into a mini loaf pan.
- Place in the freezer.
Blitz filling ingredients in a food processor until thick and creamy. - Pour evenly over the 5 bases.
- Top with berries and drizzle with choccie.
- Place in the freezer to set for a few hours.
