Healthy Oat Biscuit Christmas Recipe
The great thing about recipes that utilise oats or oat flour is that you can often make biscuits that are sweet and flavourful and satiate your appetite more quickly thanks to their fibre content.
They also contain essential nutrients such as iron and magnesium. In general, oat flour also has a lower glycemic index, making it a more ideal option for blood sugar control.
The following recipe is a nice, simple oat chocolate chip biscuit. When all the ingredients are combined, they make for a sweet treat that’s kind to your body.
GF Oats Choc Chip Biscuits

If you’d like to make this recipe even healthier, you can substitute milk chocolate chips for dark chocolate chips (55% cocoa) or unsweetened dried cranberries. Unsweetened dried cranberries, in particular, offer additional fibre and introduce antioxidants such as vitamin C to the recipe.
Ingredients:
- 1 cup of GF Oat Flour
- 1/4 cup of Gluten Free Flour
- 1 tsp baking powder
- pinch of salt
- 50g Butter or Nuttlex
- 1/4 cup of sugar
- 1/4 cup of brown sugar
- 1 tbsp of milk
- 1/2 tsp of vanilla
- 1/4 cup of shredded coconut
- 1/2 cup of choc chips (alternatively, you can use cranberries)
Method:
- Line your baking trays with silicone sheets or baking paper and preheat your oven to around 160°C.
- Add the two flours, baking soda and salt to a bowl and use a whisk to blend together.
- I used my Thermomix to blend the butter, both sugars, milk and vanilla extract. Feel free to use a blender of your choice for these.
- Once they are well combined, slowly add in the mixed dry ingredients (flours, baking soda, salt) and mix until everything is combined.
- Finally, hand stir in the coconut and the chocolate chips or cranberries.
- Use a teaspoon to scoop small amounts of dough onto the tray. Gently flatten slightly. Pop into the oven for around 12 minutes until they have browned. Leave on the tray to cool.
- In total, you should be able to make about 12 to 15 small cookies.
