Caramel Oat Bites

Ingredients

  • 200g dates soaked in hot water for one hour
  • 2 cups GF Oats, plus extra to coat
  • 1 Tbsp cashew nut butter
  • 2 Tbsps melted coconut oil
  • 2 Tbsps coconut sugar

Method

1. Drain the dates and put them in a food processor along with the oats, cashew nut butter, coconut oil and coconut sugar

2. Blend until a smooth sticky paste has formed

3. Place the mixture in the fridge for 10 minutes (makes it easier to roll into balls)

4. Separate the mixture into small portions, roll into balls and roll in the extra oats until they are fully coated

5. Store in the fridge
