How delicious do these look!? We absolutely love a good caramel filled snack 🤤
Love pods, but not a huge fan of the ingredients? We are ver excited about these home made Caramel Pods, that taste better than the original they were inspired by!
INGREDIENTS:
BASE:
- 1/2 cup of cashews
- 1/2 cup GF Traditional Oats
- 1 Tblspn cacao powder
- 2 Tblspn maple syrup
- 1/2 cup dates soaked in hot water first
- 1 Tblspn of water
- 1 Tblspn vegan butter
CARAMEL
- 1 tin of unsweetened coconut condensed milk
- 1 tsp almond butter
- 1/4 cup unsalted butter
- 2 Tblspn coconut sugar
- 2 Tblspn date maple syrup
TOPPING
- 50 g dark chocolate (Or you can use Our Dairy Free Chocolate Chips)
- 1/2 tsp coconut oil
METHOD:
- Pulse the base ingredients together and press into cheesecake molds OR muffin tins in a bowl-like shape. Freeze for 1-2 hours.
- *Make sure you press the base up around the edges to form a dish to create the "pod" effect.*
- Whilst the base is freezing, make the caramel.
- Add the caramel ingredients to a saucepan over low-medium heat and gently stir.
- Bring to a soft boil and cook until it thickens slightly.
- Leave to cool for 20 minutes.
- Spoon some of the caramel mixtures into your "pods" then freeze for at least 4 hours.
- Melt your dark chocolate and coconut oil over medium heat before adding on top.
- Store in the freezer and they will be pretty much ready to eat
