Scrambled Oats

Ingredients

  • I cup GF Oats soaked in water for 10 minutes  
  • ½ medium onion chopped
  • ½ medium tomato chopped
  • peas as per taste
  • 1 tbsp olive oil
  • Lemon juice to taste
  • Spices – Salt, turmeric, coriander powder, cumin seeds
  • Optional Garnish - fresh chillies, chopped onion, chopped tomatoes, coriander leaves

Method

  • In a pan heat oil and add cumin seeds
  • Add onions, tomatoes and sauté for a minute
  • Add the spices – turmeric, coriander powder, salt and stir together
  • Add peas, oats and cover for a minute. Make sure the oats are not sticking to the bottom of pan

Add lemon juice to taste. Garnish with fresh chillies, onions, coriander leaves, tomatoes and serve hot.
