A classic recipe with a twist, these muffins are next level delicious. The oat flour produces a fluffy texture and the golden crumble on top provides a delicious crunch! These are definitely going to be your new favourite.

Servings: 12 Muffins
Ingredients
- 2 cups GF Oat Flour
- 1/3 cup Coconut/Rapadura Sugar
- 2 tsp Baking Powder
- 1 tsp Cinnamon
- 2 Apples, diced
- 1 Free-Range Egg, whisked
- ¾ cup Unsweetened Plant Based Milk (I used Almond)
- ¼ cup Extra Virgin Coconut Oil
- ½ tsp Vanilla Extract
Crumble
- 1/3 cup Shredded Coconut
- 1/3 cup GF Rolled Oats
- ¼ cup Extra Virgin Coconut Oil
- 2 tbsp Coconut/Rapadura Sugar
- ½ tsp Cinnamon
Method

Preheat oven to 180 degrees fan forced.

Combine all dry ingredients (flour, sugar, baking powder and cinnamon) in a bowl.

Combine wet ingredients (apples, eggs, milk, oil and vanilla) in a separate bowl.

Pour wet ingredients into the dry and stir until well combined.

Divide mixture into a muffin tray.

In a separate bowl combine crumble ingredients (coconut, oats, oil, sugar and cinnamon).

Top with each muffin with crumble and bake until crumble begins to turn golden, approximately 20 – 25 minutes.
