Ingredients:
Base:
- 200g GF Oats Anzac Biscuits processed to fine crumbs
- 50g melted Copha
- Combine and press into a 20cm lined square baking tin. Place into the fridge.
Filling:
- 2 x 255g Cheese Creamy Original Vegan Cheese Spread (Woolworths)
- 415g Can Mixed Berries strained
- 2 tbspn of icing sugar (add more if you like it sweeter)
- 1 tspn vanilla extract
- 2 x sachets vegetarian Jel-it-in
- 4 tbpspn of boiling water
Jelly:
- Punnet of strawberries
- 400g Natural Berry Juice
- 2 x sachets vegetarian Jel-it-in
Method:
Base:
- Combine and press into a 20cm lined square baking tin
- Place it in the fridge
Filling:
- Place Sheese, berries, icing sugar and vanilla extract into a bowl and mix well
- In small bowl empty sachets of jel-it-in and 4 tablespoons of boiling water and mix quick – add to berry mixture – work quickly as the jel-it-in sets very quick
- Place berry filling on top of the base and return to fridge.
Jelly:
- Slice strawberries and place to top of filling
- In a small pot add juice and the 2 sachets of Jel-it-in. Bring to boil, cool slightly and pour on top of filling. Return to the fridge to set.
- Once set slice to desired portions
