
These wholesome oat muffins are naturally sweetened with monk fruit and packed with juicy blueberries, stewed apple and a hint of cinnamon. Made with oat flour, almond meal and coconut, they’re soft, nourishing and perfect for breakfast or a lunchbox treat. Finished with a crunchy granola topping, they strike the perfect balance between fluffy and golden on top.
Simple ingredients, no refined sugar, and full of feel-good flavour 🤍
Ingredients:
- 2 eggs
- 1/3 cup baking monkfruit blend
- 1/3 cup coconut oil
- 1/2 cup almond milk
- 1 cup GF Oats Oat Flour
- 1/2 cup almond meal (or another 1/2 cup oat flour)
- 1/4 cup tapioca flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/3 cup desiccated coconut
- 1 punnet fresh blueberries
- 1 apple, diced and stewed.
- GF Oats Granola to top
Method
- Preheat oven to 180C and prepare a muffin tray.
- In a large bowl, whisk together the wet ingredients until fluffy.
- Fold in the dry ingredients.
- Add the blueberries and apple, fold through gently.
- Scoop the mixture into 12 muffin holes.
- Top with some granola.
- Bake in the oven for 15-20 minutes or until golden.
