
If you've been putting off buying pancake mix because you hate standing at the stove, this recipe is the solution! No more baking individual pancakes one at a time. Add a few extra ingredients and get the most prefect chocolatey baked pancakes.
INGREDIENTS:
- 1/2 cup GF Oats Pancake Mix
- 1/4 cup chocolate coconut water (or milk)
- 1 egg
- 1/4 tsp baking powder
- 1 tbsp coconut yoghurt

METHOD
- Preheat the oven to 180°C (160°C fan forced)
- In an oven proof bowl, add all ingredients except the chocolate chips and mix well
- Add a sprinkle of chocolate chips to the combined mixture.
- Bake in the oven for 18 to 22 minutes. A skewer inserted should come out mostly clean.
Note: If using a larger ramekin or thicker layer, it may need closer to 22 to 25 minutes.
If using a wider, shallow dish, check at 16 to 18 minutes.
