INGREDIENTS
- 1 cup flour
- 1/2 cup sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup gf oats granola
- 1 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1 tsp vanilla
- 1 cup blueberries + 1 tbsp flour
METHOD
- Preheat oven to 200C
- In a mixing bowl combine flour, sugar, baking powder baking soda & salt.
- In a separate bowl, mix granola & milk. Let sit for 5 minutes.
- Pour granola mixture into dry ingredients; add egg, vegetable oil, and vanilla and stir until combined.
- Toss blueberries with flour.
- Gently fold blueberries into batter.
- Fill greased or lined muffin tins to 2/3 full.
- Bake for 18 - 20 mins.
