Blueberry Granola Muffins Recipe

Bursting with juicy blueberries these muffins are a perfect blend of wholesome and indulgent. Soft, moist, and lightly sweetened, they’re ideal for breakfast, a snack, or any time you need a treat. Easy to bake and packed with flavor, these muffins are a crowd-pleaser that pairs perfectly with your morning coffee or tea!

INGREDIENTS

  • 1 cup flour
  • 1/2 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cup gf oats granola
  • 1 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 tsp vanilla
  • 1 cup blueberries + 1 tbsp flour

 

METHOD

  1. Preheat oven to 200C
  2. In a mixing bowl combine flour, sugar, baking powder baking soda & salt.
  3. In a separate bowl, mix granola & milk. Let sit for 5 minutes.
  4. Pour granola mixture into dry ingredients; add egg, vegetable oil, and vanilla and stir until combined.
  5. Toss blueberries with flour.
  6. Gently fold blueberries into batter.
  7. Fill greased or lined muffin tins to 2/3 full.
  8. Bake for 18 - 20 mins.
