
The GF Oats take on take on the viral Kingston + peach slice. It's warm, delicious and oh so easy to make. A quick, comforting dessert with a biscuit base, spiced stewed apples, and an optional coconut custard.
INGREDIENTS:
- 3 apples, peeled if you like, diced
- 1 cup water (for stewing the apples)
- 1–2 tsp ground cinnamon (to taste)
- 2–3 tbsp brown monkfruit sweetener (adjust to your sweetness preference)
- 1 packet GF Oats Anzac-style biscuits
- Optional: coconut custard, to serve
METHOD
- Preheat your oven to 180°C.
- Stew the apples - Place the diced apples in a small saucepan with 1 cup of water.
- Add cinnamon and brown monkfruit sweetener.
- Bring to a gentle simmer over medium heat, then reduce to low.
- Cook, stirring occasionally, until the apples are soft but not mushy (about 8–12 minutes). Add a splash more water if it looks too dry.
- Prepare the baking dish
- Line the bottom of a medium baking dish (roughly 20 x 20 cm / 8 x 8 in) with the Anzac biscuits in a single layer, breaking them as needed to fit.
- Spoon the stewed apples (and any remaining syrup) evenly over the biscuit base.
- Bake in the preheated oven for about 20 minutes, until the apples are bubbling and the biscuits are lightly crisp around the edges.
- Let it cool for 5–10 minutes, then serve warm with coconut custard on top if you like.
