Apple + ANZAC Slice Recipe - Dairy Free

The GF Oats take on take on the viral Kingston + peach slice. It's warm, delicious and oh so easy to make. A quick, comforting dessert with a biscuit base, spiced stewed apples, and an optional coconut custard.

INGREDIENTS:

  • 3 apples, peeled if you like, diced
  • 1 cup water (for stewing the apples)
  • 1–2 tsp ground cinnamon (to taste)
  • 2–3 tbsp brown monkfruit sweetener (adjust to your sweetness preference)
  • 1 packet GF Oats Anzac-style biscuits
  • Optional: coconut custard, to serve

METHOD

  1. Preheat your oven to 180°C.
  2. Stew the apples - Place the diced apples in a small saucepan with 1 cup of water.
  3. Add cinnamon and brown monkfruit sweetener.
  4. Bring to a gentle simmer over medium heat, then reduce to low.
  5. Cook, stirring occasionally, until the apples are soft but not mushy (about 8–12 minutes). Add a splash more water if it looks too dry.
  6. Prepare the baking dish
  7. Line the bottom of a medium baking dish (roughly 20 x 20 cm / 8 x 8 in) with the Anzac biscuits in a single layer, breaking them as needed to fit.
  8. Spoon the stewed apples (and any remaining syrup) evenly over the biscuit base.
  9. Bake in the preheated oven for about 20 minutes, until the apples are bubbling and the biscuits are lightly crisp around the edges.
  10. Let it cool for 5–10 minutes, then serve warm with coconut custard on top if you like.
