Apple Breakfast Muffin

Did someone say muffins for breakfast? 😍🤤
Your new favourite apple muffins are here. 😉🍎


INGREDIENTS:

  • 1 banana, mashed
  •  2 eggs
  • 1 cup almond milk
  • 1/4 cup monk fruit ‘brown’ sugar
  • 1/3 cup coconut oil, melted
  • 1 tsp apple cider vinegar
  • 1 cup oats, GF Oats blended into flour or GF Oats Oat Flour
  • 1 cup self raising flour
  • 2 tsp baking powder
  • Salt
  • Cinnamon
  • 2 Apples, peeled and diced

 
METHOD

  1. Place apples into a saucepan with water and cinnamon. Cook until soft.
  2. Preheat oven to 175C and prepare a muffin tin
  3. In a large bowl, combine all wet ingredients until smooth.
  4. Sift in dry ingredients and fold to combine.
  5. Fold in cooked apples.
  6. Scoop into muffin pan and top with cinnamon and monkfruit sweetener.
  7. Bake for 25 minutes or until a skewer comes out clean.
  8. Allow to cool and enjoy! 🍎🤤​
