
Did someone say muffins for breakfast? 😍🤤
Your new favourite apple muffins are here. 😉🍎
INGREDIENTS:
- 1 banana, mashed
- 2 eggs
- 1 cup almond milk
- 1/4 cup monk fruit ‘brown’ sugar
- 1/3 cup coconut oil, melted
- 1 tsp apple cider vinegar
- 1 cup oats, GF Oats blended into flour or GF Oats Oat Flour
- 1 cup self raising flour
- 2 tsp baking powder
- Salt
- Cinnamon
- 2 Apples, peeled and diced
METHOD
- Place apples into a saucepan with water and cinnamon. Cook until soft.
- Preheat oven to 175C and prepare a muffin tin
- In a large bowl, combine all wet ingredients until smooth.
- Sift in dry ingredients and fold to combine.
- Fold in cooked apples.
- Scoop into muffin pan and top with cinnamon and monkfruit sweetener.
- Bake for 25 minutes or until a skewer comes out clean.
- Allow to cool and enjoy! 🍎🤤
