Choc Protein Pancake Stack Made using GF Oats Pancake Mix

Start your day with this indulgent yet wholesome pancake stack that pairs rich chocolate flavour with fresh fruit and creamy toppings. 

Made using GF Oats pancake mix and boosted with chocolate protein powder, these pancakes deliver fluffy texture and satisfying nutrition. Perfect for a post-workout breakfast or weekend treat.

INGREDIENTS: 

For the pancakes:

  •     1 cup GF Oats pancake mix
  •     1 large egg
  •     ¾ cup milk (dairy or plant-based)
  •     1 scoop (approx. 30g) chocolate protein powder
  •     1 tablespoon cacao powder

For the toppings:

  •     Coconut yoghurt
  •     Fresh blueberries
  •     Fresh kiwi, sliced
  •     Peanut butter (creamy or crunchy)
  •     GF Oats Raw Honey (or maple syrup for vegan option)

 

METHOD:

  1. In a medium bowl, whisk together the GF Oats pancake mix, chocolate protein powder, and cacao powder.
  2. Crack in the egg and pour in the milk. Whisk until smooth and well combined. The batter should be thick but pourable—if it's too thick, add a splash more milk.
  3. Let the mixture sit for 5 minutes to allow the oat flour to absorb the liquid. This helps create fluffier pancakes.
  4. Place a non-stick frying pan or griddle over medium heat. Lightly grease with coconut oil, butter, or cooking spray.
  5. Pour about ¼ cup of batter per pancake into the hot pan. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
  6. Carefully flip each pancake and cook for another 1–2 minutes until golden brown and cooked through. Transfer to a warm plate and repeat with remaining batter.
  7. Stack the pancakes on a serving plate. Dollop with coconut yoghurt, scatter over blueberries and kiwi slices, drizzle with peanut butter and finish with a generous drizzle of honey.
  8. Serve immediately while warm and enjoy your elite combo! 😍
