Zesty Lemon Slice using GF Oats

When life gives you lemons, make a lemon slice worth writing home about. This recipe delivers the perfect balance of tangy citrus and creamy sweetness, all layered over an oaty base. It’s bright, refreshing, and so simple you’ll wonder why you haven’t been making it for years.

INGREDIENTS


Base:

1 cup gluten free flour
1/3 cup classic monkfruit sweetener
1/3 cup @gfoats
1/3 cup dairy free butter
Zest of a lemon

Filling:

200mls lemon juice - this is for a super lemon flavour 😍🍋
1/2 can coconut cream - white part only
1/3 cup classic monkfruit sweetener
6 tbs tapioca flour
1/2 tsp turmeric for the colour

Crumble:

1/2 cup flour
1/3 cup dairy free butter
1/3 cup @gfoats
1/4 cup classic monkfruit sweetener
(Extra oats for texture if you desire like me 😮💨)

METHOD

• Preheat oven to 180C and line a 8x8/square baking dish.

Base

• Sift flour and sugar into a large bowl and stir in oats.
• Add in butter and lemon zest and using your fingertips rubs the butter into the flour mixture until crumbly.
• Crumble base into your prepared tin and press down with a wet spatula to avoid sticking.
• Set aside and make the filling.

Filling

• Add all of the filling ingredients into a medium saucepan over low/medium heat.
• Whisk constantly to avoid clumping and sticking for about 5 minutes or until the filling is glossy and thick.
• Pour onto base straight away and smooth with a spatula. The filling will get thicker as it cools so don’t be too long 🤪
• Make the crumble.

Crumble

• Add all of the crumble mixture ingredients to a bowl and using your fingertips rubs the butter into the flour until it resembles a crumble texture.
• Crumble over the lemon mixture and add a few extra oats for some extra texture if desired.
• Place in the oven for 40-45 minutes or until it is golden in colour and slightly jiggles.
• Allow to cool completely before slicing.
• Store in an air tight container and enjoy! 🫶
